Nachos on a Blackstone griddle is a delicious and versatile dish that brings out the best flavors of this popular snack. The Blackstone griddle provides an even cooking surface that helps achieve that perfect crispy texture on the nachos.

Skinny Beef Nachos

It took me quite a long time to make the perfect plate of skinny beef nachos and being on Weight Watchers and all chips are a big deal to me. Nachos are probably one of my favorite foods to eat. I could snack on tortilla chips and salsa at Mexican Restaurants all day long since they are free, dip the chips in queso sauce, etc but Chips are best loaded with toppings!

Tortilla chips are high in points. My favorite brand of tortilla chips are the Donkey Chips and you can find them in the Natural Food section at your grocery store. They are low in sodium but just 12 chips alone can be 6 points. When you start piling on all the extra toppings for nachos, that can get pretty high up there. No thank you.

Ingredients for Nachos

  • Ground beef - I love to use 93% lean ground beef when making nachos and I'll always add in a packet of low sodium taco seasoning. If using 93% lean ground beef, for 3 oz the smart points come to 4 points. You can use 99% fat-free chicken or turkey to make it 0 points.
  • 1 packet of taco seasoning
  • 1 bag of tortilla chips
  • 2 cups shredded cheese
  • Optional toppings: sliced jalapeños, sour cream, guacamole, salsa

How to Make Nachos on a Blackstone

  1. Heat your Blackstone griddle over medium-high heat.
  2. Add the ground beef, Cook until the beef is browned and no longer pink on the inside.
  3. Stir in the black beans, diced tomatoes, and taco seasoning. Cook for another 5 minutes to let the flavors combine. (optional)
  4. Spread a layer of tortilla chips on the griddle. Top with the beef mixture and shredded cheese.
  5. Cover the griddle with a lid or foil to melt the cheese. This should take about 5 minutes.
  6. Once the cheese is melted, remove the nachos from the griddle and serve hot with your favorite toppings like jalapeños, sour cream, guacamole, and salsa.

Nacho Toppings

When it comes to nacho toppings there's plenty out there. Being on Weight Watchers just think of all the zero point toppings you could possibly do.

  • Pico De Gallo -freshly made or store-bought
  • Black Beans
  • Corn
  • Green Onions
  • Fat Free Refried Beans
  • Hot Sauce
  • Cilantro

Homemade Tortilla Chips

Like I mentioned above, the points for nachos can really very depending on what type of tortilla chips you use. There are many store bought tortilla chips out there but it is best to make your own using corn tortillas, flour tortillas etc. Josephs lavash wraps are only 60 calories and then I cook them in my air fryer at 400 degrees for 3 minutes. I heard about Josephs Lavash wraps on Instagram and gave them a try and really liked them. You can also bake the tortilla chips in your oven at a higher temp like 400 degrees for 10 minutes. If using your air fryer the chips get done in no time and they turn out super crispy!

  • 1 Josephs Flax, oat bran & whole wheat flour lavash bread
  • 2tbspTostitos Salsa, Con Queso, Medium
  • 1ozshredded fat-free Cheddar cheese
  • 2Tbspfat free salsa
  • 2Tbspfat-free plain Greek yogurt
  • 2mediumuncooked scallion(s) (can use cilantro or parsley)

  • 3ozcooked 93% fat-free ground beef (from 1 pound of 93% cooked with Taco Seasoning)

Instructions

  1. Heat your Blackstone griddle over medium-high heat.
