Yep, this raw mushroom salad recipe is a good example of that. I don’t know about you but I very often stumble upon quite a few recipe websites dedicated to the raw food diet lifestyle.

Raw Food

To be honest, the thought of it sometimes runs shivers down my spine.

But it was only after ‘cooking up’ this fresh mushroom salad recipe below that I realised I had actually created my very own first raw meal myself. Well as far as I know it is qualified to be called 100% raw.

I might be missing something here maybe.

As I said before I am not a specialist in the raw recipes field at all.

Honestly, this raw mushroom salad recipe tastes freakin’ good!

I have always been fond of raw mushrooms in salads anyway.

How about you?

I know quite a few people who don’t like raw mushrooms at all. But I love it. Add a simple lemon and olive oil marinade and some fresh herbs to it.

It is the same for raw cauliflower (love those raw cauliflower florets as an appetizer with a mayo dipping sauce), celeriac remoulade or a shaved raw fennel salad by the way.

It just tastes good, no diet reason whatsoever behind it at all.

Raw Vegetables

Add a handful of crunchy seeds and nuts to the salad and you are all done! Hmmm would suit my steak tartare well… Which is by the way, raw as well.

Raw food?

Once in a while, why not!

I love any type of mushroom, fresh or dried.

You could make it so much better by adding lion’s mane mushroom to your recipes for instance!

My raw mushroom salad recipe: an easy salad of raw mushrooms with a lemony olive oil dressing, fresh mint, pumpkin seeds and parmesan cheese!

Ingredients

  • 9 oz white mushrooms (250 g)
  • a handful pumpkin seeds salted
  • a handful pine nuts
  • 3 tbsp good quality olive oil
  • a handful fresh parsley
  • a handful fresh mint
  • 2 tbsp lemon juice
  • a handful parmesan cheese shaved
  • garlic powder
  • pepper
  • salt

Instructions

  1. Clean the mushrooms with a soft brush and trim them. Then slice the mushrooms into bite-size bits depending on how large they are and add them to a large mixing bowl.

  2. Shred the fresh parsley and mint roughly and then add this to the mushrooms in the bowl.

  3. Stir and sprinkle with the olive oil and the lemon juice. Season with a pinch of garlic powder, pepper and salt. Put it in the fridge for 30 minutes to marinate. Then sprinkle with the salted pumpkin seeds and pine nuts.

  4. Give the salad a good stir. Then check the seasoning and add extra pepper, salt, garlic powder, olive oil or lemon juice to taste if necessary. Transfer the mushroom salad to a clean serving bowl or dish and sprinkle with the shaved parmesan cheese. Serve.

Let’s get one thing clear here.

Of course I am talking about the classic white mushrooms here for my raw mushroom salad recipe. You can also find it by the name of common mushroom or white button mushroom.

How do you call them?

These white button shaped mushrooms are the ones that you can find the most in any supermarket.

Hang on, I can hear you say. And what about those similar looking brown mushrooms then?

Those are called cremini mushrooms and are actually pretty similar.

Does that also mean that you can use those as well in my raw mushroom salad recipe?

Of course!

However what I wanted to say, is that you can eat those 2 varieties perfectly raw.

There is no harm in them. In fact raw mushrooms and these mushrooms in general are very good for your health anyway.

Mushrooms are low in calories, and contain a lot of fiber, vitamins and minerals.

Are you fond of raw mushrooms?

The thing here I want to warn you for, is that not all mushrooms should be eaten raw.

For my raw mushroom salad I would only recommend the white and brown button mushrooms because those are totally safe.

Edible Raw Mushrooms

However wild mushrooms like chanterelles for instance.

Don’t use those raw.

These types of mushrooms can be very strong in taste and often leave a very bad aftertaste in your mouth. Like you would eat raw onion. Besides their taste wild mushrooms can also be very chewy as well.

Anyway they taste much better if you cook them well.

What would happen if you eat one of those wild mushrooms raw?

Poisonous Mushrooms

First of all, you won’t die of course.

But you can get a very upset stomach and feel uncomfortable for hours if not days.

It is a case of food poisoning really. In extreme cases eating poisonous raw mushrooms can also cause vomiting and skin rashes.

My message is, stick to those everyday button mushrooms and you will be fine!
