Low Calorie Healthy Hollandaise Sauce Recipe | The Bewitchin' Kitchen (1)

I was recently candid about some of my weight loss struggles and how I’m determined to get back to my healthier ways. Since I believe that there is always a healthier alternative, I’m excited to share with you guys ahealthy hollandaise sauce recipe.

This healthy hollandaise sauce recipe is from the Fixate Cookbook that was released from Team Beachbody. The cookbook is presented by Autumn Calabrese, you may recognize Autumn from the 21 Day Fix programs. (Speaking of which here are my 21 Day Fix results and my 21 Day Fix Extreme results.) I have only made a few recipes so far, but each one tastes pretty good. I’ve done a few vinaigrettes, healthy hollandaise sauce and dressings and I’m looking forward to making a few of the desserts next. My husband keeps making the homemade salsa and says it’s the best salsa he has ever had (I haven’t tried it since I can’t stomach raw tomatoes) .

To make this recipe you will a glass bowl that will fit snug over a pot (double boil process), the same process you use when you make a ganache.

So what do you think? If you like a lemony hollandaise, I really think you’ll love this recipe.

What is hollandaise sauce made of? ›

Hollandaise sauce (/hɒlənˈdeɪz/ or /ˈhɒləndeɪz/; French: [ɔlɑ̃dɛz]), meaning Dutch sauce in French, is a mixture of egg yolk, melted butter, and lemon juice (or a white wine or vinegar reduction). It is usually seasoned with salt, and either white pepper or cayenne pepper.

What is a common mistake with hollandaise sauce? ›

The most common mistake people make with Hollandaise is adding melted butter that is too hot, or adding too much too soon. When this happens, the emulsion breaks — it becomes thin and grainy. If your butter is too hot, just stop making the Hollandaise for a minute or two to allow the butter to cool.

What is the most common mistake in hollandaise sauce? ›

Hollandaise sauces are best cooked at temperatures around 120-140 degrees Fahrenheit. Anything over this maximum puts this condiment at risk of splitting, which occurs when the creamy, smooth emulsion of the egg yolks, lemon juice, and melted butter breaks. The sauce will separate into pools of fat floating in liquid.

Does more butter make hollandaise thicker? ›

That being said, if you prefer a richer, thicker sauce, you could try 3 tbsp butter per 1 egg yolk, and continue lowering the butter-to-yolk ratio until you find a thickness you are happy with. Or, as the other answer said, you could try adding more egg yolks, but keep in mind this will make a larger amount of sauce.

Can you add too much butter to hollandaise sauce? ›

The second cause is either adding too much butter or adding it too quickly. When either of these occur, the sauce will look glossy like icing and pull away from the sides of the bowl, while the butter will float on top of the mixture.

Does butter thicken hollandaise sauce? ›

Put the yolks, butter and 2 tbsp water in a heavy-based pan and heat very gently, whisking all the time. As the butter melts, the sauce will begin to thicken; don't be tempted to hurry things along by turning the heat up, the sides of the pan should be cool enough to touch at all times.

What is the basic formula for hollandaise? ›

In a small bowl, whisk together egg yolks, lemon juice, cold water, salt and pepper. Melt butter in a saucepan over low heat. Gradually whisk yolk mixture into butter. Continue whisking over low heat for 8 minutes, or until sauce is thickened.

How to make hollandaise sauce Gordon Ramsay? ›

First make the hollandaise sauce. Using a large balloon whisk, beat the egg yolks with a squeeze of lemon juice and seasoning in a bowl set over a pan of simmering water. Beat vigorously for about 10 minutes until the mixture thickens.

What if I put too much lemon in my hollandaise sauce? ›

What do I do if my hollandaise sauce is too lemony? You can either start again, or try adding another egg yolk and a bit more melted butter.

Can you save and reuse hollandaise sauce? ›

If hollandaise sauce has split (broken), don't worry! You can still save it and make a delicious hollandaise. Get it hot again on the stove (just like you did when you melted the butter).

Why is my hollandaise not thick enough? ›

How do you fix a runny hollandaise? Blenders tend to make runny hollandaise - it's usually because the butter was too cold and hasn't cooked the eggs enough to thicken them. To thicken a runny hollandaise, tip the mixture into a heatproof bowl set over simmering water and whisk over the heat until thickened.

Does eggs Benedict always have hollandaise sauce? ›

Eggs Benedict is a common American breakfast or brunch dish, consisting of two halves of an English muffin, each topped with Canadian bacon, a poached egg, and hollandaise sauce. It was popularized in New York City.

What's the difference between eggs Benedict and egg Florentine? ›

From there, the variations are endless and other recipes such as eggs Florentine or Royale have also become very popular. In this case, Florentine eggs Benedict substitute bacon for spinach, while Royale eggs Benedict add smoked salmon instead of bacon.
